This time of year, young adults across the country are heading off to college. 19 year-old Maayan Schechter assumed she’d head off to some faraway university right after high school, but the college acceptances she’d been banking on never materialized. Now, a year later, she is finally headed away from home, a bittersweet fact for her mother, Audrey Galex.
