During this Thanksgiving season, families and friends will sit together to share meals and stories from this past year. Among them is Jack Ray. He and his wife have lived at their home just outside of Atlanta, in Hiram, for nearly 20-years. Now, in our occasional series, The Radio Story, he explains why this Thanksgiving will be different for them.

Today there is a good chance that you’re brimming with Post Holiday Thanksgiving Gluttony Guilt … what’s sometimes known as PHTGG. Okay there’s no such thing … but odds are that you’re quite full. And in your fridge there might also be some left over’s from yesterday. Well we found a restaurant in Atlanta that takes typical Thanksgiving ingredients and turns them into quite nice sandwich. We actually aired a portion of this interview back in early November on the birthday of John Montagu, the 4th Earl of Sandwich and the inventor of the sandwich. We’re speaking here with Sous Chef, Greg Baker. He works at Muss and Turners in Vinings.

Millie Coleman Pumpkin Pie

During the 1930s, 40s, 50s, THE place to dine in downtown Atlanta was the Frances Virginia Tea Room. The restaurant is long gone, but the memories and the food live on in a cookbook that itself is celebrating a quarter century this year. It’s the Frances Virginia Tea Room Cookbook, and the author is Millie Coleman. Earlier we stopped by her kitchen, where she showed us how to make a pumpkin pie in the Frances Virginia fashion.

Pumpkin Pie Recipe (makes 3 8” pies)

Filling:
1 16oz can pumpkin
1/4 cup butter softened
6 eggs
1 1/2tsp corn starch
1 3/4c sugar
3/4tsp salt
1/2tsp each of cinnamon, ginger, nutmeg
1/2c undiluted evaporated (non-sweetened) condensed milk
2c fresh milk
1 1/2c water

Blend all ingredients in mixer. If time allows, refrigerate overnight to bring out more flavor. Pour 2 2/3c of filling into unbaked pie shells. Bake at 375 degrees for 45-55 minutes or until firm.

Topping:
2c whipped cream
1/4c pale dry sherry
1c chopped pecans
